Sushi Roku launches vegan omakase tasting menu

Sushi Roku, a vegan-friendly restaurant on The Strip, recently launched a vegan omakase tasting menu. The new menu is $40 per person and features four courses.

The restaurant, which serves creative Japanese dishes with a California twist (and Europe and Latin America), acknowledges the growth of vegan dining in Las Vegas.

Innovative Dining Group Partner, Lee Maen says, “Its important for us to always keep our menus fresh and flavorful. Veganism is a lifestyle that embraces that, and we want to provide our guests with more vegan options, so everyone can enjoy the experience of Omakase.”

The meal starts with an organic kale salad with King Oyster mushrooms, crispy shitake mushrooms and a ginger plum vinaigrette. It may sound basic, but it’s one of the best salads we’ve ever had thanks to the flash-fried shitake mushrooms that add a crunch, and the dressing that is light but incredibly flavorful.

The second course of Sushi Roku’s vegan omakase treats guests to a trio of appetizers — miso eggplants that melts in your mouth, roasted cauliflower and grilled corn with vegan mayo.

Sushi Roku’s third course lets you choose between three options: four pieces of assorted vegan nigiri and the vegan roll, made with grilled eryngii and asparagus, jalapeño and butter lettuce wrapped in soy paper; a tofu steak served piping hot with a mixed mushroom tobanyaki, topped with shishito peppers; and a smokey, grilled avocado with ponzu (our top pick).

Chocolate avocado mousse rounds out the meal.

Located in The Forum Shops, Sushi Roku offers upscale dining overlooking the Las Vegas Strip. Park in valet (if you’re a local, the restaurant even covers the $7 fee).
