The Las Vegas Strip continues to become more vegan-friendly. The latest restaurant to offer vegan options on The Strip is Carversteak at Resorts World. Yup, another steakhouse has vegan options in Las Vegas.

Carversteak, which opened at the end of 2021, is the first endeavor from Carver Road Hospitality and nightlife impresario and award-winning hospitality exec Sean Christie. In the kitchen is chef Daniel Ontiveros, who’s culinary resume is impressive and includes Bouchon, Scotch 80 and Comme Ça. As he did with Scotch 80, Ontiveros has brought a handful of plant-based options to the sexy Strip steakhouse.
It joins the ranks of vegan options at Resorts World, including the soon-to-open Crossroads Kitchen.
Start your meal with a choice of two vegan appetizers. First, there’s the crudité. It made with creamy Green Goddess hummus, Calabrian chili and Everything Spice. It comes with a bounty of fresh veggies for dipping.
Next are the chickpea fries. Served as thick fries, these crispy bites are good on their own. Or, dip ’em in the cilantro jalapeño lime dip for a little extra oomph.
For the main course, Carversteak once again has two vegan options.
The housemade semonlina pasta with veggies is carb-y and delicious while still being relatively light.
However, our pick is the vegan chop. Served like a steak, the chop is made with all the protein-packed goodies. It’s got organic legumes and grains along with baby turnips. It comes topped with chimichurri.
Round out your meal with vegan sides. They serve spinach with a garlic confit, as well as wild mushrooms in a Madeira wine sauce with parsley.
Finally, there’s dessert. Carversteak offers an assortment of sorbets to round out your meal. Choose from strawberry, passionfruit, mango and cocoa.
