Peterson’s Pantry

The meal prep industry in Las Vegas continues to thrive. Peterson’s Pantry is your answer for home-cooked (mostly) comfort food that’s made-from-scratch and entirely vegan.

Founded by Stephanie Nies-Peterson, Peterson’s Pantry vegan meal prep launched in August 2019 in Las Vegas. Named after Nile’s husband’s father, the meal prep company pays homage to him.

“Jaxson’s father always wanted a family business but never got a change before he got sick and passed away,” says Nies-Peterson. “So, this was our homage to him and making his dream come true.”

Nile is no stranger to the culinary world. She’s been running restaurants and pizza joints since she was a teenager, including restaurants on The Strip.
 
Things haven’t always been smooth sailing for her.

“Our biggest hurdle to overcome was acceptance of our relationship due to us being a gay, transgender couple,” she explains of her marriage to Jaxon. “However, our different races have played a factor at many times.”
 
Jaxon is Black and Cape Verdean and she’s mostly Native American with a little German and Irish.
 
“We received quite a bit of backlash from so-called ‘friends’ and other people in our lives who didn’t agree with anything we were doing,” she says.
 
As Black Lives Matter grew to national recognition, she’s lost customers.
 
“We’ve even faced problems more recently about both our being gay and our interracial relationship from our very own customers,” says Nies-Peterson.
 
But, she doesn’t let it get to her.
 
“We simply don’t feed into the negativity. We don’t allow ignorance to affect our relationship in any way, shape, or form,” she says.

With a menu rotating quarterly, the Peterson’s Pantry’s menu is vast. And we mean vast. Each dish is made fresh the day of delivery, too.

Let’s start with the build-your-own bowls. Protein choices include the regulars like tempeh, seitan and tofu — but then expand far beyond any protein selection in town. You’ve got options like grilled chicken, breaded and spicy chicken, turkey cutlets, carnitas, fried chicken and Beyond products.
 
Then, add your carb selection which ranges from mashed potatoes to Jag (Portuguese rice and beans). 
 
Peterson’s Pantry sandwiches include grilled cheese, Sloppy Joes, subs, wraps, and more.
 
The entree list is extensive and features dishes including creamy mushroom pasta, stir fry, lasagna, twice-baked potatoes, baked ziti, and meatballs.
 
If you’re craving pizza, Peterson’s Pantry offers pies like BBQ chicken, spinach and artichoke, and mac and cheese.
 
They’ve even got you covered for breakfast with meals such as bacon and sausage burritos, crunch wraps, French toast, omelettes and quiche.

And, let’s not forget the sweets. Wrap up your meal with cookies, cupcakes, brownies, sticky buns and more.

What we love

If you ask us, the chicken pot pie steals the show. Baked in a flakey pie crust and filled with peas, carrots and mushrooms, this dish will warm up your insides.

There’s also the calzones. These baked pizza dough dishes come filled with veggies and a generous glass jar of homemade marinara sauce for dipping (or smothering, whatever works).

For a side, order the flavorful macaroni salad, a light deli salad with crunch chunks of celery.
 
Since it’s just us, it’s hard to try everything. But, everything we tried, we loved.
 
According to Peterson, the most popular dishes are the calzones, pizzas, pot pies, breakfast crunch wraps, burritos, lasagna and their KFV bowl (an all-vegan take on the famous KFC bowl). 
 
Bonus: if there’s a dish you loved that was on a previous menu, ask Peterson’s Pantry to make it.
 
“Shoot, even if it hasn’t been on the menu, just let me know what you’d like me to make and I’ll buy the ingredients and whip it up,” she offers.
